Smoking Water

Smoking water is a liquid infused with smoke flavour and used in cooking to add a smoky taste to dishes. It is produced by cold smoking, which involves exposing water to smoke for an extended period to allow the smoke to permeate the liquid.

  • Select the wood: The first step is to select the wood for smoking. Different woods have different flavours and intensities, so choosing the suitable wood for the desired flavour profile is essential.
  • Build a smoke generator: A smoke generator produces smoke that will be infused into the water. This can be done using various methods, such as a dedicated smoker, a stovetop smoker, or even a smoking gun.
  • Infuse the water with smoke: The next step is to place the water in a container that can be sealed and expose it to the smoke for an extended period. This can be done using various methods, such as a cold smoke chamber or simply sealing the container with the water and smoke inside.
  • Strain the water: After it has been infused with smoke, it should be strained to remove any debris or impurities that may have been introduced during the smoking process.
  • Store the smoking water: The smoking water can be stored in clean, airtight containers or old whisky barrels until it's ready to be used after being filtered.
